Christmas Soup with Kale and Kielbasa

I’ve made this several times for Christmas Eve and always delicious. This was a recipe known as Alton Brown’s Polish Christmas Soup. Served with a good bread and butter, this is a nice light meal to compliment all the holiday appetizers and sweets, and looks festive as a red,green and white soup.

If you keep the sautéed sausage separate from the soup and just layer in individual bowls you serve, this keeps sausage seasoned. And, since there will probably be soup leftover, another meal can be made from freshly sautéed sausage, reheat soup and repeat. Continue reading

Blackeyed Pea and Cabbage Soup

Spicy Baked Pork Ribs

When you are craving  ribs anytime….baby back, St Louis, or any kind of pork spare ribs….this is the recipe because there is no wait time for a marinade or extra efforts for any outside grill duty….

A very spicy version of a traditional BBQ sauce is lathered on, and basted several times while it bakes in the oven or even a small smart oven.

German Meatballs

A recipe from a 1980’s cookbook, highlighting all the diversity of San Antonio’s cultures.

This is Great Stand-alone Meatball to use in other recipes.

This is a variation of  Konigsberger Klopse.

Traditional versions of this recipe can be seasoned with lemon, capers, cloves and anchovies for added taste and is made as a white sauce (no tomato sauce) from boiling the meatballs and using the broth. I changed the recipe to bake the meatballs.
