Almond & Cranberry Cream Cheese Squares

Here’s a modified popular Crescent Roll recipe that I took to weekly quilting group that’s part of a special church community in Fayette County that make quilts for Lutheran World Relief. They piece, pin, tie, and sew  “one of a kind” creations, all from donated fabrics. It is an effort of love, time and talents.

Herb Roasted Turkey Breast

Thanksgiving for only two or three or four?

This is the easiest, tastiest, most delicious way to do turkey. And the house will smell incredible while you are roasting…Of course, there is only white meat, but so tender and flavored.

I did not do a gravy, just sliced with an electric knife and served along a few sides….(See Spinach Salad with Spiced Pumpkin Seeds, Crockpot Dressing, Pecan Yams/Sweet potatoes, Cranberry Jelly/Relish. So simple. I will do this combo again) Continue reading

Breakfast Casserole

Great recipe to mix together, freeze, and serve at a later date.

This is a tested recipe from my sister Betty. She served this at a brunch the day after her daughter’s wedding.  Several weeks before the event, she made a practice batch, froze, thawed in refrigerator a day before baking, then baked, just to make sure it was worthy of eating. Success? Yep, there were no leftovers at brunch!

Cowboy Candy Jalapenos

Warning!!! These are addictive!!!

There are several versions and now “store-bought” varieties of these delicious little candied Jalapenos.

Serve them on top of your favorite crackers which are spread with cream cheese to make little  bites of happiness.

White Chili with Salsa Verde

So…. this is the opposite of the  traditional RED chili pepper, beef version of  a Texas Chili recipe, but, I’m including it in my Chili recipes because it uses chiles (green) and beans (a  controversial ingredient to some Chili experts).

It is ladled over bowls,  filled with  crushed tortilla chips and Montery Jack Cheese , almost making it a “white”  variation of a  tortilla soup.

A little Salsa Verde spooned on top adds a perfect finish.

My dear friend, Margaret, sent me this recipe several years ago to serve on Christmas Eve. (She is often that little voice in the back of my head, telling me to eat healthier).  This is healthy, hearty, as well as unbelievably good.

Of course, my Christmas Eve feast also included extra tortilla chips for Salsa Verde dipping, and I have to confess (sorry Maggi), I made a quick qucamole, and a few simple individual cheese nachos alongside. But it’s okay, that little voice is telling me …”everything is good in moderation!”

Betty’s Pecan Bars

Betty’s Banana Nut Bread

My sister Betty is great at finding fail-proof recipes, that usually travel well. Since Texas is a BIG state, her creations have traveled all over the state to relatives and friends houses for holidays, birthdays, and family reunions.

 

She’s baked this Banana Bread recipe for years, and gives all credit to a little cookbook published back in the early 60’s by the Mt Olive Lutheran Ladies Aid in Houston, Texas. I don’t know it that officially makes it a “Retro” Recipe, but it’s a keeper.
