Potato & Green Peas Soup

This little soup can be made from scratch with fresh potatoes and frozen green peas, or just substitute pantry canned vegetable to pull together quickly. Top with shredded cheese.

Ingredients

  • 2 cups peas (frozen or a 15 ounce can, drained)
  • 3 medium potatoes, peeled and chopped in quarter (or 1 can drained)
  • 3 cups chicken stock
  • 2 cups water
  • 1 Tablespoon olive oil
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1/4 cup grated cheese (parmesan or other)
  • salt and pepper

Directions

  1. Heat oil in large saucepan, add onion and garlic, cook stirring until the onion in soft.
  2. Pour the chicken stock into the saucepan with the onion and garlic and bring to a boil.
  3. Add the potatoes, boil uncovered for 5 minutes. Stir in the frozen peas, bring to a boil and cook for another 5 minutes or until chopped potatoes are tender. .. or if using pantry items… Add the drained potatoes and peas and stir.
  4. Take ladled of potato and pea mixture and blend in batches in a blender (or handheld immersion style blender) until smooth.
  5. Serve soup sprinkled with grated cheese.
