Banana Pound Cake

Translating a British Banana Pound Cake Recipe … for a little afternoon tea time ….

Ingredients;

  • 225 grams (8 oz) butter (2 sticks)
  • 225 grams ( 1 cup / 8 oz) sugar
  • 3 -4 bananas – peeled and mashed with a fork on a plate
  • 10 dates – cut up into little pieces
  • 225 grams (8 oz)  flour (1 7/8 cups)
  • 1 Tbsp baking powder
  • 4 eggs – separated

Instructions;

  1. Preheat the oven to 400 degrees.
  2. Melt the butter in a saucepan placed over medium heat. Once the butter has melted add the sugar and stir until melted. Add in the bananas and dates and stir to combine.
  3. Add the flour and baking powder and stir until completely absorbed by the mixture and then remove from the heat.
  4. When the cake mix has cooled to the touch, add in the egg yolks and stir together.
  5. Whisk the egg whites in a separate bowl, and then gently fold the whisked egg whites into the cake batter.
  6. Line a 9-inch cake tin or loaf pan with parchment paper. Pour the cake mixture into the cake tin and cook for 30 minutes or until a knife inserted into the centre of the cake comes out clean.

An amazing simple cake to make for your family, you will love the flavour and texture of this cake. The first thing you need to do is let the butter and sugar together and you will do that in a saucepan over medium heat. Once the butter has completely melted, add the sugar and cook enough so that the granules of the sugar melts before you continue with the recipe.

Once everything is melted, add the flour with the heat on low then the mashed bananas and fold that in then turn off the heat and add the dates and mix that in. Add the egg yolks, at this point the mixture, should be warm, if still hot it will cook the egg yolks. Whisk the eggs in then set the batter aside

In another bowl, you will whip then egg whites until it reaches a soft peak then take about a third of the egg whites mixture and fold it in the banana cake batter until well combined then carefully add the rest of teh whites and carefully fold it in until all the egg whites are incorporated into the cake batter.

Pour the batter into a prepared cake tin and bake in a 400 degrees Fahrenheit preheated oven for 30 minutes. Once baked, let the cake cool before inverting it on a plate and serve it, this a yummy treat to have for a picnic. Enjoy.
