Easy Butter Bean Soup
Quick and delicious soup … serve by itself , with toppings, or alongside a favorite sandwich …
Ingredients
- 16 oz canned Butter Beans
- 16 oz chicken broth
- 1 tsp Thyme
- 1 tsp Tarragon
- 1 tsp pepper or more to taste
- toppings (optional)
Directions
- Add beans to container to use emulsion blender to puree beans, gradually adding small amounts of broth to help thin puree.
- Combine puree and broth in saucepan.
- Season with thyme, tarragon, pepper and bring to boil and then simmer 5 minutes or as desired.
Top with any combination of fresh and pantry toppings such as chopped avocado slices, crispy fried onion toppings, shredded cheese. won ton or tortilla strips.
