Sopapilla Cheesecake

A perfect way to enjoy a little bit of cheesecake heaven, any time of day. Will keep for several days.

Ingredients

  • 2 8oz packages cream cheese
  • 2 8 oz cans Crescent roll dough
  • 1 1/2 cups sugar
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 Tblsp ground cinnamon

Directions

Preheat oven to 350.

  1. Unroll 1 can crescent roll dough, place on ungreased 13 x 9 baking dish. Stretch to cover bottom, pressing firmly on perforations to seal.
  2. In a medium bowl, beat cream cheese and 1 cup of sugar and vanilla with electric mixer on medium speed. spread over dough in baking dish.
  3. Unroll 2nd can of dough and carefully place on top of cream cheese layer. Pinch seams together carefully.
  4. Pour melted butter carefully over top of dough. Mix remaining 1/2 cup of sugar with cinnamon and sprinkle evenly over butter.
  5. Bake 30 minutes or until center is set. Cool 20 minutes. Refrigerate for easy cutting into bars.

Cover and refrigerate any remaining bars.
