Instant Smashed Potato Salad

Save time with short-cuts and using Instant Mashed Potatoes, made ahead.

Ingredients

  • 1 2-oz package instant Mashed Potatoes
  • 1/4 cup chopped pickles, dill, sweet, or bread and butter
  • 3 radishes, thinly sliced (optional)
  • 1 hard-boiled egg, sliced
  • 2 Tbsp onion, finely chopped (optional)
  • 4 Tbsp mayo or miracle whip
  • 2 tsp yellow mustard
  • 2-3 Tbsp pickle juice (as desired)
  • Salt and pepper to taste
  • dried dill weed (optional)

Directions

  1. Prepare potatoes per package instructions, allow to cool or make ahead and refrigerate.
  2. In a large bowl stir in pickles, radishes, hard-boiled egg, onion. (other add-ins as desired)
  3. Combine mayo, mustard and pickle juice in separate bowl.
  4. Add potatoes and condiments into the large bowl and mix into a well tossed mashed potato mixture. Add additional condiments and pickle juice to moisten if more needed.
  5. Season to taste with salt and pepper and dill (optional) and stir.
  6. Serve or refrigerate
