Instant Smashed Potato Salad
Save time with short-cuts and using Instant Mashed Potatoes, made ahead.
Ingredients
- 1 2-oz package instant Mashed Potatoes
- 1/4 cup chopped pickles, dill, sweet, or bread and butter
- 3 radishes, thinly sliced (optional)
- 1 hard-boiled egg, sliced
- 2 Tbsp onion, finely chopped (optional)
- 4 Tbsp mayo or miracle whip
- 2 tsp yellow mustard
- 2-3 Tbsp pickle juice (as desired)
- Salt and pepper to taste
- dried dill weed (optional)
Directions
- Prepare potatoes per package instructions, allow to cool or make ahead and refrigerate.
- In a large bowl stir in pickles, radishes, hard-boiled egg, onion. (other add-ins as desired)
- Combine mayo, mustard and pickle juice in separate bowl.
- Add potatoes and condiments into the large bowl and mix into a well tossed mashed potato mixture. Add additional condiments and pickle juice to moisten if more needed.
- Season to taste with salt and pepper and dill (optional) and stir.
- Serve or refrigerate
