Baked BBQ Meatloaf

Ingredients

  • 1 1/2 lbs ground beef (* or 1 lb)
  • 1 cup fresh breadcrumbs (* or 3/4 cup if using 1 lb beef)
  • 1 diced onion
  • 1 lightly beaten egg
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 8-oz cans tomato sauce
  • 3 Tbsp vinegar
  • 3 Tbsp brown sugar
  • 2 Tbsp dijon mustard
  • 2 Tbsp Worcestershire sauce

Directions

Preheat oven to 350 degrees.

  1. Mix together the beef, breadcrumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce. Form this mixture into a loaf and place it in a shallow pan.
  2. Stir together the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire and the water (if too thick). Pour this sauce over the meatloaf.
  3. Bake for 1 hour, basting every 15 minutes with the pan juices. remove spoon any liquid over top and return to oven for another 20 minutes.
  4. Let rest for minimum of 10 minutes.

Tips: Leftovers? Try serving sandwichs with mayonnaise or Miracle Whip.
