Ida’s Black Bean Brownies

What to cook with those healthy, affordable and pantry stocked cans of Black Beans? Brownies, of course! There are lots of options to experiment a little with this recipe, so try them a variety of ways …

1. the larger the pan, the slimmer and firmer the brownies, which is great for that perfect bite size taste, 2. flexiblity with chocolate ( I found out that 6 individual wrap Ghirardelli Dark Chocolate Squares = 1/2 semi-sweet- chocolate chocolate chips) … and … 3. sad, but true, if you forget to add the baking powder and/or salt and coffee … you will still get wonderful brownies, just a little flatter but tasty… very forgiving…. and the smoother the puree mixture, the smoother and less bean-like texture ….. this is alot of beans!

Ingredients

  • 1 15-oz can black beans rinsed and drained
  • 3 large eggs
  • 3 Tbsp canola or sunflower oil 45 mL
  • 1 tsp vanilla 5 mL
  • ¼ cup unsweetened cocoa powder 30 g
  • ⅔ cup sugar 120 g
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ tsp finely ground or instant coffee (optional)
  • ½ cup semi-sweet chocolate chips 60 g

DIRECTIONS:

1. Preheat oven to 350 degrees F

2. Puree black beans, oil, and vanilla into a smooth paste. (a Braun hand-held blender works great )

3. In large bowl mix the bean puree and eggs.

4. In separate bowl, combine cocoa powder, sugar, baking powder, salt and coffee.

5. Add dry ingredients with puree/eggs and stir in chocolate bits or chocolate equivalent.

6. Choose either 8×8, 9×9 or larger (7×11 inch) pans and line with parchment paper. The bigger the pan the thinner and more firm the brownies.

7. Bake for apprx 35 – 40 minutes. A toothpick test will help determine how long .

Cool brownies before cutting.
