Almond Milk Bread Pudding
What to do with alot of opened Almond Milk in the frig and almost a loaf of week old packaged white bread…. search for a nice little comfort food recipe…. Bread Pudding anyone?
Ingredients:
- 1 tsp cinnamon
- 1/4 cup sugar
- 3/4 loaf of white bread (about 10-12 slices) can toast like bagel in oven or toaster to crisp, then cut in cubes
- 1/4 cup brown sugar
- 3 eggs
- 3 Tbsp softened butter
- 3 cups vanilla almond milk
Directions: Preheat oven to 350
- Mix together the cinnamon and sugar, set aside.
- Cut up loaf by stacking 3-4 slices of bread at a time and cut into cubes.
- Spray a 9×13 cake pan. Spread the bread cubes into the pan. Sprinkle with the cinnamon sugar mixture.
- In a mixing bowl, beat the eggs. Add the brown sugar and butter. Mix until smooth. Stir in the almond milk. Beat smooth. Pour the milk-egg mixture over the bread cubes.
- Bake for 45-55 minutes, until the custard is set but not dry. It will be gooey and wet in the bottom. Let the bread pudding cool for 30 minutes to help it set up more and the bread to absorb more of the milk. Refrigerate it overnight for the best results.
You can serve it cold, but it’s best warmed up in the microwave.
