Double Cheese Meat Roll
This is a well-known favorite within our family, originally shared by my Mother, back in the 80’s. Everyone loves it!
Ingredients
- 1 1/2 lbs ground beef
- 3/4 cup cracker crumbs
- 1 egg
- 1/4 cup onion, finely chopped
- 1 8 oz can tomato sauce
- 1 tsp sauce
- 1/2 tsp oregano
- 1/2 tsp pepper
- 1 1/2 cups grated cheddar cheese
Directions
Preheat oven to 350.
- Combine beef, egg, cracker crumbs, onion, 1/3 cup tomato sauce, salt, pepper and oregano. Mix well.
- Shape into flat rectangle on waxed paper.*
- Sprinkle cheese evenly over meat. Roll up like jelly roll and press ends of roll to seal.*
- Bake in shallow baking dish for 1/2 hour. Drain excess fat.
- Pour remaining sauce over roll and bake additional 30 minutes
Or, another option for steps 2 -3 * spread half of meat mixture into sprayed baking dish and make wide trench. sprinkle cheese in trench. layer rest of meat over top and press ends and sides to seal.
Can also use packaged shredded 3-cheese mexi-cheese mix.
