Ginger Okra and Tomatoes
When friends offered me fresh Okra from their garden, how can one refuse?
This is an easy side dish with a slight sweet taste and garlic & ginger aroma.
Ingredients
- Fresh Okra
- Grape Tomatoes (or substitute any variety)
- 2 – 3 Tbsp Olive Oil
- 1/2 tsp garlic powder (or 1 tsp if fresh minced garlic)
- 1/2 tsp ground ginger (or 1 tsp if fresh grated ginger)
Directions
- Wash and rinse okra, cut ends and slice lengthwise, if longer than 4 inches, cut twice.
- Heat nonstick skillet with olive oil. Add sliced okra and saute on low-medium for 3-4 minutes.
- Slice tomatoes lengthwise and add to skillet and stir.
- Add pepper and ginger, stir and continuing cooking, uncovered for 20 minutes or until tender.
