Venison Marsala

My sister volunteered this tasty Venison recipe. Makes enough for 2 hearty meals for two people.

Ingredients

  • 1 1/2 lbs Venison (backstrap or tenderloin)
  • 1/2 cup flour
  • 1/3 cup parmesan cheese (grated)
  • 1 teaspoon salt
  • 4 tablespoons butter
  • 1/4 lb fresh mushrooms (sliced)
  • 2 green onions with tops (chopped)
  • 1/2 cup beef broth
  • 2 tablespoon lemon juice
  • 1/4 cup Marsala wine (can substitute apple juice)
  • chopped parsley

Directions:

  1. Trim meat and cut into 1/4 inch slices.
  2. Combine flour, cheese, salt.
  3. Dredge meat into flour mixture.
  4. Melt 2 tablespoon butter in skillet and brown meat 1 minute on each side. Side aside and keep warm.
  5. Melt remaining butter to skillet, add onions and mushrooms and saute until tender.
  6. Add broth, lemon juice and wine. Mix well.
  7. Return meat to skillet, cover and simmer for 15 minutes or until tender.

To serve, pour pan juices over meat and sprinkle with parsley. Good with rice.
