Rueben Casserole

If you enjoy Reuben sandwiches, then why not take all those great ingredients and make an easy casserole….

This was a demo at my favorite Market Street store and they supplied the recipe. Can’t wait to try …

ingredients

  • 6 slices rye bread, cubed
  • 1 (16 oz) can sauerkraut, drained and rinsed
  • 1 pound deli sliced corned beef, cut into strips (can substitute deli turkey)
  • 3/4 cup Russian-style dressing or Thousand Island
  • 2 cups shredded Swiss cheese

Directions:

Preheat oven to 400 degree F.

  1. Spread bread cubes in the bottom of the 9/13 inch baking dish.
  2. Spread sauerkraut evenly over the bread cubes, then layer meat strips over sauerkraut. Pour dressing over all.
  3. Spray aluminum foil with cooking spray and use to cover baking dish, sprayed side down.
  4. Bake in preheated oven for 20 minutes.
  5. Remove cover, sprinkle with cheese and bake uncovered for another 10 minutes or until cheese is melted and bubbly.
