Spicy Baked Pork Ribs

When you are craving  ribs anytime….baby back, St Louis, or any kind of pork spare ribs….this is the recipe because there is no wait time for a marinade or extra efforts for any outside grill duty….

A very spicy version of a traditional BBQ sauce is lathered on, and basted several times while it bakes in the oven or even a small smart oven.

Ingredients:

  • 2 cups ketchup
  • 1/2 cup brown sugar
  • 2 Tbsp vinegar (I used apple cider vinegar)
  • 2 Tbsp minced onion (I used chopped scallions)
  • 2 Tsp minced garlic
  • 2 Tsp dry mustard
  • 2 Tsp cayenne
  • salt and black pepper

Directions:

Preheat oven to 325 degrees.

  1. In a bowl combine all ingredients except ribs to make a sauce.
  2. In a roasting pan, place ribs on a rack and season with salt and pepper.
  3. Spoon a thick layer of sauce over ribs and place in pan in oven.
  4. Baste ribs every 30 minutes (total time 1 1/2 hours or longer until tender).
  5. Slice into individual ribs and serve.

Serve with Creamy Cilantro Potato Salad (see recipe).
