Chicken Thighs – Turkish Style
A marinade combining lemon, mint, ginger, paprika with greek yogurt, makes delicious Chicken thighs that are juicy and have a slightly tangy taste.
Ingredients:
- 6 – 8 chicken thighs, skin removed, trimmed (I used boneless)
- 1 Tbsp lemon juice
- 1 cup plain Greek Yogurt (can substitute low-fat plain)
- 2 cloves garlic, minced
- 1 Tbsp fresh ginger, minced or grated
- 2 tsp hot paprika (or substitute 2 tsp sweet with 1/4 tsp cayenne)
- 1/2 tsp salt
Directions:
- In a large bowl, place chicken and squeeze lemon juice and coat.
- Whisk yogurt, garlic, ginger, paprika, mint and salt in a separate bowl.
- Pour yogurt mixture over chicken and stir to coat. Cover with plastic wrap and refrigerate (at least 4 hours or up to 24 hours).
- When ready to prepare, preheat broiler.
- Place chicken thighs on a pan with a rack, and broil for apprx 15 minutes or until slightly brown.
- Change oven to bake/roast at 400 degrees and bake , apprx 20 minutes longer. Chicken should be juicy and mean will be dark pink, even if cooked through). Serve.
