Italian Sausage, Carrots and White Beans
This quick stovetop skillet combination of simple ingredients creates flavors similar to long simmered stew or cassoulet, largely due to savory tarragon (fresh or dried).
Ingredients
- 1 to 1 1/2 lbs of sweet Italian Sausage
- 2 Tbsp Olive Oil
- 2 carrots, cut thin on bias
- 1 onion chopped
- salt and pepper
- 1 15-ounce can white beans, rinsed
- 3/4 cup dry white wine
- 1 Tbsp tarragon
Directions:
- Cook sausages in heated oil over medium high heat, turning, not burning, until cooked thoroughly, 10 to 12 minutes.
- Transfer to cutting board and let rest 5-10 minutes before slicing on bias.
- Use skillet again by wiping clean, add olive oil on medium heat. Add carrots, onion, salt and pepper and cook until tender, 8 to 10 minutes, stirring lightly.
- Add beans and wine and simmer for another 5 minutes.
- Fold in sliced sausage and tarragon until warmed and serve.
