Slow Cooked Balsamic Pork Roast

A Happy and healthy way to make enough for two meals for two. The cut is economical, sometimes on sale, and cooks slowly to become moist and tangy.

Ingredients

  • 2 lb pork shoulder roast (boneless)
  • kosher salt to taste
  • 1/2 tsp garlic powder
  • 1 tsp red pepper flakes
  • 1/3 cup chicken or vegetable broth
  • 1/3 cup balsamic vinegar
  • 2 Tbsp honey

Directions:

  1. Place meat into a crock pot/slow cooker and season with salt, garlic powder and red pepper flakes.
  2. Mix broth and vinegar and pour over the pork.
  3. Drizzle honey over meat.
  4. Cook for 4 hours on High, or 6 -8 hours on Low.
  5. Use tongs to remove from slow cooker and lightly pull apart in chunks with fork.
  6. Return to cooker and ladle 1/2 cup sauce over and keep warm until ready to eat.

Tips: Serve first meal for two with a avocado/tomato/romaine salad and quick saute’d mushroom and broccoli florets.

Tips: Bonus meal: store leftover meat and sauce separately refrigerator. Reheat chopped meat, with sauce, 6 oz broth , chopped mushrooms on stovetop while boiling chopped carrots and new potatoes in saucepan. simmer meat  for 30-45 minutes, add drain veggies and thicken with 1 tbsp. cornstarch mixed in water.
