Individual Baked Egg in Wilted Spinach

Healthy, low-calories combine for a savory breakfast or brunch which can be made in less than 20 minutes.

The recipe can expanded as needed, allowing an individual corning or porcelain ramekin for each person.

Adapted from similar recipes on skinnytaste.com/ , preventionrd.com/ and smittenkitchen.com/ (added sliced sauted mushroom) so you know it must be good thing!

Ingredients for One Serving

  • 1 tsp olive oil
  • 1 chopped scallion
  • 4 oz spinach
  • 1 egg
  • salt and pepper to taste
  • shredded parmesan or asagio cheese
  • non-stick cooking spray

Preheat oven to 400 degrees.

  1. Lightly spray oven-safe dish or ramekin with cooking spray.
  2. Heat a skillet over medium-low heat, add oil, scallions and cook 2 -3 minutes. (Large skillet if expanding recipe)
  3. Add spinach, salt and pepper and toss  until spinach melts, about 2 minutes.
  4. Mix in cheese, remove from heat and add to ramekin, making a well in the center.
  5. Break egg into the ramekin and salt and pepper.
  6. Place ramekin on cookie sheet and bake, apprx 15-16 minutes, or until whites are set and yolk firm.

Serve immediately.

Serving: 1 Calories 155 calories; Fat 9.3 g; Protein 12.2 g; Carb; 7.3 g; Fiber 3.7 g;Sugar;0.7g; Sodium: 244 mg (without salt).

Tips: can serve with quartered piece of wheat toast and/or orange slices.

Can serve alone or alongside orange slices.
