Roasted Cauliflower
I read somewhere that Cauliflower is the new “Kale”. That must mean that more and more people are discovering that it is healthy for us, and also okay to experiment in new and unique recipes.
Way back in the 20th Century, one of popular ways to serve Cauliflower was covered with a rich, creamy Hollandaise or Cheesy Sauce.
Here’s a simple way to enjoy using Balsamic and Olive Oil.
Ingredients:
- 1 head cauliflower
- Balsamic Vinegar
- Extra Virgin Olive Oil
- Salt and Pepper
Preheat oven to 375 degrees.
- Wash, clean and cut florets into chunks and place in a large bowl.
- Liberally drizzle Balsamic and Olive Oil over florets, add salt and pepper and mix well to coat.
- Line a baking sheet with aluminum foil and place florets in single layer on sheet.
Roast for 30 – 45 minutes in the top portion of the oven until tender.
