Creamy Mashed Cauliflower

Use Cauliflower instead of Potatoes and make a creamy, delightful substitute for Mashed Potatoes.

Why not try serving this version this instead?!

Ingredients:

  • 1 medium head cauliflower
  • 1 tablespoon cream cheese, softened
  • 1/4 cup grated Parmesan
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 3 tablespoons unsalted butter softened
  • 1/2 teaspoon chopped fresh or dry chives or parsley

Directions

  1. Bring a large stockpot of water to boil.
  2. Wash , clean and cut cauliflower into small pieces.
  3. Cook in boiling water for about 7 minutes until done.
  4. Drain well and quickly pat cooked cauliflower very dry between several layers of paper towels, and do not let cool.
  5. In a bowl with an immersion blender, or food processor,  puree the hot cauliflower with cream cheese, Parmesan, garlic, butter, salt, and pepper. Can leave smooth with a few chunks.

Can top with chives or parsley.
