Easy Chicken Pasta Salad
Finding a perfect little Chicken Pasta salad to make-ahead with some help from pre-made ingredients is a good solution for any potluck, buffet or ready-when-you-are meal
Ingredients
- 12 oz pasta, heart-shaped, bow tie or other
- 8 0z cooked chicken breast strips
- 1/2 cup thinly chopped celery
- 1/2 cup dried cranberries
- 1/2 cup sliced almonds
- salt and pepper to taste (optional)
Dressing
- 1 cup mayonnaise
- 1/2 cup apple cider vinegar
- 1/2 cup sugar
- Cook pasta according to package directions. Drain.
- Rinse pasta in cold water until completely chilled. Drain. Transfer cool pasta to large bowl.
- Toss the chicken, celery, dried cranberries, and sliced almonds with the pasta to mix evenly.
- In separate bowl, mix together mayonnaise, apple cider vinegar and sugar for dressing
- Mix together, salt and pepper to taste or omit. Can be prepared and refrigerated. Let sit 15 to 30 minutes before serving.
variations: Instead of mayo/apple cider/sugar dressing, for color and variety, use bottled dressing, Russian (Red) or Green Goddess (green).
tips: If you love cheese, add a little freshly grated little fresh parmesan cheese.
