Easy Corn and Black Bean Salad
This is an easy side salad to go with pork, beef or chicken recipes, tex-mex or mild.
Ingredients
- 1 can, 14 ounces, black beans , rinsed and drained
- 2 cups frozen corn kernels or canned
- 1 small red bell pepper, seeded and chopped
- 1/2 red onion, chopped (or substitute white/yellow)
- 1 1/2 teaspoons ground cumin
- 2 teaspoons hot sauce
- 1 lime, juiced
- 2 tablespoons vegetable or olive oil
- Salt and pepper
1. Combine all ingredients in a bowl. (If using frozen corn, let stand 15 minutes for corn to defrost and flavors to combine)
2. Toss and serve. Refrigerate for 3 to 4 days.
