Betty’s Pecan Bars
This is a classic holiday sweet to take to friends, family or just to have around the house for everyone to enjoy! Our family loves to eat these, and my sister Betty has mastered this recipe. It’s a close tie to the classic Pecan Pie, and you can always cut the bars into whatever size works for your entertaining or family.
Crust:
- 3 cups Flour
- ½ cup Sugar
- 1 cup Butter
- ½ tsp. Salt
Beat or blend until mixture resembles crumbs. Heavily grease bottom and sides of 15” by 10” jelly roll pan. (or Betty uses her Pampered Chef stone pan and sprays with Pam)
Press mixture firmly into pan. Bake at 350 for 20 minutes.
Filling:
- 4 Eggs
- 1½ cup Karo Syrup
- 3 Tbsp. Butter, melted
- 1½ tsp. Vanilla
- 2½ cups Chopped Pecans
Blend first four ingredients. Stir in Pecans. Spread over hot crust.
Bake at 350 for 25 minutes or until set. Cool and cut into bars.
