Betty’s Banana Nut Bread
My sister Betty is great at finding fail-proof recipes, that usually travel well. Since Texas is a BIG state, her creations have traveled all over the state to relatives and friends houses for holidays, birthdays, and family reunions.
She’s baked this Banana Bread recipe for years, and gives all credit to a little cookbook published back in the early 60’s by the Mt Olive Lutheran Ladies Aid in Houston, Texas. I don’t know it that officially makes it a “Retro” Recipe, but it’s a keeper.
- ½ cup Butter, melted
- 1 cup Sugar
- 2 Eggs
- ½ cup Buttermilk (can keep the dry mix in refrigerator and it works great to mix with water)
- 1 tsp. Baking Soda
- 2 cups Flour
- 2½ Bananas, mashed
- ½ c. Pecans
Mix in order listed. Batter will be a little lumpy.
Grease and flour bread ban and add mixture.
Bake at 350 for 1 hour.
tips: check after 45 minutes and if sides are getting more done than the middle, cover the sides with small pieces of foil to allow center to cook until done.
Cool for 10 minutes and remove from pan.
