Sausage & Tortellini Soup
Try this with any variety of packaged fresh tortellini.
Ingredients
- 1 pound pork or turkey sausage (bulk or with casings removed, mild or italian )
- 1 medium onion, diced
- 3 large carrots, diced
- 4 cloves garlic, minced
- 1/4 cup flour
- 1 tsp salt
- 1/2 tsp pepper
- 4 cups chicken broth
- 1 14 oz pkg fresh tortellini (or add 2 packages for a little more)
Instructions
- Brown sausage in a large soup pot. Drain off most of the fat. Add onion and carrots and saute for about 5 minutes.
- Stir in the garlic and flour. Cook and stir for 1 minute.
- Add salt, pepper, and broth. Bring to a boil, reduce heat and simmer for 5-6 minutes.
- Add tortellini. Simmer for about 10 – 15 minutes or till pasta is tender. Serve hot.
