Ramen Noodle & Slaw Salad
I also call this “Eve’s Asian Slaw Reunion Salad”
Every two years we have a family reunion in a small rural community in Texas that’s Potluck. Since some are coming from surrounding areas, here’s one of our favorite “make-ahead” salads, that we requested the recipe for. Here is Eve’s version, and please see her idea for sharing recipes at reunions below.
- 2 (3 oz) pkgs. of beef flavored Ramen noodles
- 2 (8 oz) pkgs. of cole slaw mix
- 1 cup of toasted sliced almonds
- 1 cup of toasted sunflower kernels
- 1 bunch of green onions chopped
- 1/2 cup of sugar
- 3/4 cup veg. oil
- 1/3 cup white vinegar
Set aside flavor packets from noodles. Crush noddles and combine with slaw mix, nuts and onions. Whisk together flavor pkts., sugar, oil and vinegar. Pour over slaw, mix and serve.
*note: I usually combine noodles, nuts and seeds in ziplock bag, put dressing in a separate container and toss just prior to serving.
Suggestions: Eve’s idea…why don’t people bring small copies of the recipes for the dishes they bring in case others would like to try to duplicate them at home?
